- 2 tablespoon quick-cooking tapioca
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 3/4 cup milk, scalded
- 1 tablespoon butter, or margarine
- 4 egg yolks, beaten until thick
- 4 egg whites, beaten stiff
- 1 cup grated sharp cheddar cheese
- Follow directions for puffy omelet, adding 1/2 cup grated sharp cheddar cheese just before folding in egg whites.
- Before putting omelet in oven, sprinkle top with an additional 1/2 cup of grated cheese.
